QUALIFICATIONS AND JOB DESCRIPTION

Set along the dazzling Bosphorus waterfront in the historic district of Karaköy, The Peninsula Istanbul provides a showcase for both vibrant Turkish culture and superlative hospitality within Galataport, a new waterfront revitalisation project. The hotel is comprised of four exquisite buildings – three of them historic and beautifully restored – and welcomes guests arriving by land or sea.

 Key accountabilities 
  • Produces all food required for the assigned kitchen and controls the daily ordering and requisitions to meet budgeted food cost.
  • Administers the weekly duty schedules and presents them to the Executive Chef for approval.
  • Supervises and allocates work to staff according to their knowledge and skill level.
  • Is accountable to create new recipes to regularly update the menu and maintain a high quality of food.
  • Ensures that the hotel cost control policies and procedures are followed and prevents wastage of surplus stock without undue sacrifice on food quality.
  • Is responsible for the hygiene and cleanliness of the assigned kitchen, food production and food storage areas and always ensures a high standard of food quality safety.
  • Maintains up to date technical worksheets, recipes and costings and ensures understanding and compliance from team members.  
General requirements 
  • Extensive culinary knowledge in both classical and current culinary trends.
  • Creativity to create dishes on brand with the restaurant.
  • Minimum 6 years’ similar experience in 5-star hotel or equal restaurant establishment.
  • Experience of complex, large scale operation with service period reaching from breakfast to late night dinners. 
  • High School Diploma or diploma from culinary school or apprenticeship (or equivalent).
  • Ability to maintain an extremely sanitary environment while working. 
  • Ability to communicate effectively with the team.
